The Recipes

Dutch baby pancake recipe

INGREDIENTS

  • 3 large eggs at room temperature (put in warm water for 5 minutes)
  • 1/2 cup all-purpose flour
  • 1/2 cup whole milk at room temperature (microwaved 15 seconds)
  • 1 tbsp sugar
  • 1 tsp vanilla
  • pinch of salt
  • pinch of nutmeg (optional)
  • 3 tbsp butter



INSTRUCTIONS

  1. Preheat oven: Place cast iron pan into the oven to preheat at 425 degrees for at least 8 minutes.
  2. Blend batter: Add ingredients to the blender and blend until smooth, scraping down the jar to catch any stuck flour.
  3. Butter the pan: Melt softened butter into the skillet and brush butter up the sides of the skillet.
  4. Add batter: Pour all the batter into the center of the pan.
  5. Bake: Immediately return to the oven and bake 16-18 minutes, until puffed and browned at the edges.


HOMEMADE WAFFLE recipe

INGREDIENTS

  • 2 eggs
  • 2 cups flour
  • 1-3/4 cup milk
  • 1/2 cup canola oil
  • 1 tbsp sugar
  • 4 tsp baking powder

INSTRUCTIONS

Preheat waffle iron. Beat eggs in large bowl with a hand beater until fluffy. Beat in flour, milk, oil, sugar, baking powder, salt and vanilla, just till smooth! 

Hash Brown Quiche by Mrs Margaret's Kitchen

INGREDIENTS

  • 1 pkg frozen hash browns, thawed (I used 30oz bag, shredded)
  • 1/3 cup butter, melted
  • 2 1/2 cups of shredded cheddar cheese
  • 2 to 3 cups of diced, cooked ham
  • 1/4 cup chopped onions
  • 1 cup milk
  • 5 eggs, beaten

INSTRUCTIONS

  1. Grease a 9x13 inch pan and press the hash browns into the dish, then brush with butter.
  2. Bake at 425 degrees for 25 to 30 minutes until lightly golden.
  3. Remove from the oven and cover with ham, onions and cheese.
  4. Mix eggs with milk and pour over the mixture.
  5. Bake at 350 degrees for about 30 minutes or until set.

Making hash brown quiche / Video

french toast strata with apple cider syrup

INGREDIENTS

  • 1 (1 lb) loaf unsliced french bread
  • 1 (8 oz) package cream cheese, cubed
  • 8 eggs
  • 2 1/2 cups of milk, light cream or half & half (I use milk)
  • 6 tbsp butter, melted
  • 1/4 cup of maple syrup


CIDER SYRUP

  • 1/2 cup sugar
  • 4 tsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1 cup apple cider or apple juice (I use apple juice)
  • 1 tbsp lemon juice
  • 2 tbsp butter

INSTRUCTIONS

  1. Cut french bread into cubes. You should have about 12 cups of bread cubes.
  2. Grease a 3-quart rectangular baking dish. Place half the bread cubes in the dish. Top with the cream cheese cubes and remaining bread cubes. I usually split the bread cubes and cream cheese cubes and do layers. I like some of the cream cheese on top! 
  3. Combine eggs, milk, melted butter, and maple syrup in a blender container or a mixing bowl. Process or beat until well combined. Pour egg mixture evenly over bread and cheese cubes. Using a spatula, slightly press layers down to moisten.
  4. Cover with plastic wrap and refrigerate for 2 to 24 hoiurs.
  5. APPLE CIDER SYRUP: Combine sugar, cornstarch and  cinnamon in a small saucepan. Stir in liquids. Cook and stir the mixture over medium heat until thickened and bubbly. Cook and stir 2 more minutes. Remove saucepan from  heat and stir in butter until melted. Cool completely and store in refrigerator. Reheat and serve with strata.
  6. Remove plastic wrap from baking dish. Bake, uncovered, in a 325 degree oven for 35 to 40 minutes, or until the center appears set and the edges are lightly golden.
  7. Let stand about 10 minutes before serving.
  8. Serve with the Cider Syrup.
  9. Makes 6 to 8 servings.

monkey bread

INSTRUCTIONS

  • 1/2 cup brown sugar
  • 1 stick of butter, melted
  • 1/2 cup of chopped nuts, I use pecans
  • 1 package (12 rolls) of frozen dinner rolls, I use Rhodes
  • dash of cinnamon

INGREDIENTS

  1. Mix sugar and nuts together and pour in the bottom of a well greased bundt pan. Pour melted butter over  the ingredients. Use a knife and stir butter into your sugar and nuts. 
  2. Place all 12 rolls in a circle around the bundt pan. Cover with a towel and let sit on your counter overnight to rise. 
  3. Bake at 350 degrees for 30 to 45 minutes until golden brown.
  4. Immediately turn over onto a plate.
