Halibut with Mangoes and Macadamia Nuts

INGREDIENTS

  • 1 pound of fresh halibut
  • 1 mango
  • 1/4 cup of roasted macadamia nuts
  • 1 tbsp butter
  • olive oil (try a flavored olive oil)
  • mango infused vinegar (or any flavored vinegar)

INSTRUCTIONS

  1. Cut your fillet in half and salt and pepper well. 
  2. Lightly dust your fillets in flour.
  3. Pan fry in olive oil. The rule is 10 minutes per inch. About 5 minutes on each side.
  4. Add 1 tbsp of butter in your last minute of cooking, swirling the fish around in the pan.
  5. Remove your fish to a plate and quickly deglaze with your vinegar.
  6. Pour over your fish and add your fresh mangoes and roasted macadamia nuts.
