Wash and peel carrots. Prep tips of the carrots if using by washing and cutting them down.
Boil the carrots in salted water in a long pan just until a toothpick can easily go through the surface, but not all the way through the carrot. Let cool or refrigerate overnight.
Combine olive oil, honey, sea salt and pepper in a bowl. Brush both sides of the carrots on a foil or parchment lined baking sheet. Bake at 400 degrees for about 30 minutes.
